A field guide to every dumpling on our menu

If you are new to the menu, the dumpling section can look like a wall of similar words. Here is the plain version of what each one actually is.
Soup dumplings are thin skinned and filled with broth. Potstickers are pan seared with a crisp lace bottom. Bao are the pillowy steamed buns, folded around braised pork. Wontons are the silky ones we serve in soup or under chili oil.
If it is your first time, get the pork soup dumplings and the pan seared potstickers. If you want a little adventure, add the crab and roe. You cannot really go wrong.
